Vitor is one of Portugal’s great young Chefs, and he’s been making his way as a Restauranteur both in Portugal and abroad. After getting the wine bug from Dirk Niepoort, he decided to take matter in his own hands (literally) and craft one of Portugal’s craking new explorations of the Alentejo’s Serra de S.Mamede, and in Castelo Rodrigo with his newest Colmeal Wines.

Grapes: field blend inter alia Grand Noir, Trincadeira, Tinta Roriz, Arinto
Grapes come from an 85-year-old vineyard, known as Salão Frio.
30 to 40% of the blend used for this red wine actually comes from the white grape Arinto. Initially a five-day maceration takes place, then the must is fermented in stainless steel barrels, over a period of two months, before the wine matures for a year in used French oak barrels
