Food Pairing
Pairs beautifully with hard cured cheeses, fatty fish, Asian style food, poultry, pork and veal
Grapes: Gouveio, Viosinho, Vinhas Velhas
Small, tight trusses and simple berries mean that production per hectare does not exceed 2300 kg, in soils at altitudes above 500 meters, classified geologically as shale/granite. Grapes from Alijó, Murça and tabuaço; very old vineyard (80 years). The wood selected is deliberately from the second and third year, only a small percentage of new wood, so as not to highlight the intense fruit and slowly integrate it, mainly focusing on French and Hungarian oak, resulting in a wine of extreme elegance, where freshness and acidity merge nicely. Grapes harvested from Alijó, Murça and tabuaço; very old vineyard (80 years).
Aged in French and Hungarian oak barrels at low temperatures. “Elevage” for 9 months in the same barrels (35% new wood) “sur lie”, with “battonage” every 2 weeks , 20% Gouveio aged for nine months in new oak (mostly French with 10% Hungarian)
