It is vinified from an open outlet and the must is placed in small carafes of 1 m³, where it remains between 24 and 36 hours to allow it to decant through natural precipitation. At the end of this process the must is transferred to stainless steel tanks where it is fermented, with a temperature control made with chilled water. There is a special care when harvesting the grapes that have the right balance between acidity and alcohol. The base wine is usually foamed in March of the following year and stagnates in the basement before 12 months in the case of Reserva. It is a sparkling traditional method, fermented in a bottle, where the remuage is done by hand in wooden desks. Because it is a natural brute, it has no added sugars in the expedition liqueur.
