An aroma of caramel and raisins complemented by spicy and smoky notes. Sweet in the mouth, but well balanced by the powerful acids. In the aftertaste we recognize aromas of walnuts and fig jam.
Food-pairing
should not be decanted. Can also be drunk on its own, but is also a good companion with cheese or semi-sweet desserts. Excellent with fruit salads, chocolate, petit fours and coffee.
Grapes: Boal (Bual)
The grapes are selected and then pneumatically pressed. The fermentation is interrupted after a few days by adding alcohol of 96% to the desired strength. The wine is then aged for at least 10 years according to the traditional "canteiro" method, i.e. the wine is slowly oxidized in 620 l barrels in a non-insulated room, with natural temperature fluctuations. (This is in contrast to the faster "estufa" method, where the wine is heated).
The barrels are not completely filled, because oxidation is one of the desires in the aging process of Madeira wine. It is precisely because of this that he can handle oxygen so well later on and you can store the wine for quite a long time, even once the bottle has been opened.
