9 months in French oak barrels
Manual harvest in late October early November. Transports in small boxes of 20 kg. Manual selection of the grapes upon arrival at winery. Fermentation in rotating vessels with temperature control for 15 to 20 days. Fermentation is stopped by adding SO2, cold followed by filtering.
