The harvest is manual, then the grapes are carefully selected by hand, separating the perfect berries and bunches that will be used. The crushing of the grapes for the extraction of the must is done with the feet in a small press to prevent the seeds from breaking and the wine getting poor quality tannins. Part of the wine is fermented in mills, the other part in clay amphorae for eight days, followed by 2 weeks of skin contact. The wine is transferred to new French oak barrels where it is aged for 14 months. After maturation, the final batch is made and bottled without filtration and stabilization.
