Colares is a tiny DOC on the windy rocks west of Lisbon. It is one of the few areas that have escaped the grape aphid which destroyed all vineyards in Europe around 1864. In this area, men with large straw hats dig holes in the dune sand 3-5 meters deep to plant the vines in the clay soil. Because of this deep position, the grape aphid could not nest on the root. As a result of the very poor soil the root goes extremely deep, up to 100 meters and more. As a result, the vine pierces many different soil compositions. This leads to minerals and salty wines, which can mature well. Both the white and the red wines can take age for 10 years
