The grapes come from vines that are 45-50 years old.
It is one of the last vineyards to be harvested. The grapes are trampled underfoot, later transferred to barrels, where they ferment for eight days. The maturation period in new and used barrels at a ratio of 80% and 20% respectively lasts 16 months
