These wines refer to the Carthusian monks who, since 1598, lead a solitary life of prayer in the monastery of Santa Maria Scala Coeli, in Evora, in the heart of the Alentejo. The monastery is the only one of the Carthusian order in Portugal and was founded in 1587. It houses eleven monks who stay in seclusion every day except on Sunday because they take a walk through the vineyards in the immediate vicinity. The order numbered about 370 monks and 75 monials in 2006. The mother house of the Carthusian Order is the Grande Chartreuse in the Grenoble area. Furthermore, the order has 24 monasteries spread over three continents.

Fermentation takes place in stainless steel containers at a controlled temperature of 16 °C. The stage is followed on fine lees for nine months with regular batonnage
