The grapes are carefully pressed at low pressure, followed by alcoholic fermentation at controlled temperatures between 16 and 18ºC. After fermentation, the wine undergoes a stage in stainless steel vats, during which the fine lees are kept in suspension. Before bottling, the wine is filtered and stabilized by the action of the cold.
