A delectable white wine lemon clear, and green tones, of color. A delicate aroma of lemon, green apples and dried linden flowers. Very good structure in the mouth, fresh acidity and the same flavors of fresh fruit with the typical minerality of Encruzado.
Food-Pairing
Delicious with fish, grilled fresh fish, white meat and as an aperitif
Grapes: Encruzado 100%
The grapes are harvested by hand in the second week of September, carefully selected and transported in small boxes of 18 kg, followed by a second selection on arrival at the winery. The grapes are completely destemmed and immediately pressed. The resulting juice went to small stainless steel tanks where it was decanted for 48 hours at low temperature. After being cleared, the fermentation follows, with selected indigenous yeast, in French oak barrels of 500L. During the fermentation in the barrel the fine lees were stirred (battonage), after the fermentation the wine remains in the barrels for another 4 months.
