The perfect wine with red grilled meat, lamb, game dishes and traditional cheeses
Grapes: Trincadeira, Alicante Bouschet, Cabernet Sauvignon
Following rigorous monitoring of the ripeness of the grapes, the vinification process begins when they arrive at the winery, where they are destemmed and gently crushed. This is followed by alcoholic fermentation in stainless steel presses with mechanical treading and maceration at a controlled temperature of 22-25ºC for 10 days. Malolactic fermentation takes place in low volume stainless steel vats. The wine is then aged for 6 months in new French and American oak and chestnut barrels, then bottled and aged for a further 6 months in the cellar.
