A delicious wine, clear and deep red in color, an aroma of black fruit such as blackberries, with some hints of orange blossom. The taste is well balanced with ripe tannins and a long complex finish. A wine for special occasions.
Food-Pairing
Excellent with all kinds of meat dishes and powerful cheeses
Grapes: Touriga Nacional, Tinta Roriz, Tinto Cão, Touriga Franca, Tinta Amarela, Sousão
Total destemming of the grapes followed by gentle crushing. Part of the batch is initially vinified by the traditional method of milling with foot steps, finishing the fermentation in stainless steel, and the remaining batch is vinified only in stainless steel. In both vinifications, a brief pre-fermentative maceration is carried out, followed by fermentation in tanning 6-8 days at a controlled temperature of 28-30 °C, with relatively frequent overruns. After the alcoholic fermentation, a period of maceration is carried out, after which the wine is separated from the pasta with which it is fermented, and finally followed by a malolactic fermentation. The whole batch stages in French oak barrels for 24 months.

The wine is powerfully structured with its layers of tannin and dusty texture. Black fruits provide the weight behind this structure giving a firm, mineral wine that needs some more aging. Drink from 2021. Roger Voss
