These wines refer to the Carthusian monks who, since 1598, lead a solitary life of prayer in the monastery of Santa Maria Scala Coeli, in Evora, in the heart of the Alentejo. The monastery is the only one of the Carthusian order in Portugal and was founded in 1587. It houses eleven monks who stay in seclusion every day except Sunday because they take a walk through the vineyards in the immediate vicinity. The order numbered about 370 monks and 75 monials in 2006. The mother house of the Carthusian Order is the Grande Chartreuse in the Grenoble area. Furthermore, the order has 24 monasteries spread over three continents.

Grapes: Aragonez, Trincadeira, Alicante Bouschet, Castelão
Produced from the grape varieties Aragonez, Trincadeira, Alicante Bouschet and Castelão, planted in the vineyards of the Eugénio de Almeida Foundation. When the grapes reach the ideal state of ripening, they are harvested and transported to the cellar, where the technological process begins with a total decomposition and light bruising of the grapes. The grapes are then fermented separately, in stainless steel vats, at a temperature of 27ºC, followed by prolonged maceration. Aged for 12 months in French oak barrels and 12 months in bottle.
