The grapes, previously destemmed, went through a low temperature pre-fermentative maceration for 24 hours. The alcoholic fermentation was done in small stainless vats with temperature control, not going over 27° Celsius for 12 days. The wine aged, partially, for 12 months in French and American oak barrels.
