This is an organic red wine, made with the Baga grape from various terroirs in the Bairrada region of southwestern Portugal. Presents elegant aromas, with a hint of fruit such as strawberry and plum, liquorice notes and notes of spices such as black pepper, bay leaves and thyme. On the palate it is fruity, with a beautiful structure and velvety texture, with a very fresh and inviting aftertaste. Overall, it's a great introduction to the very enjoyable Baga grape, specifically here involving limestone terroir and the Atlantic influence of western Bairrada
The name for this wine, Dnmc (or Dinamico), reflects the idea that expressions of the local Baga grape from different locations will produce a complex, and dynamic wine. It also could be seen as a nod to the biodynamic principles and treatments that Filipa Pato and William Wouters have introduced in their vineyards. They have been increasingly focused on organic and biodynamic viticulture as the years go by
Food-Pairing
A real crowd pleaser, this wine combines excellent with a nice platter of charcuterie, a nice crunchy vegetable salad, grilled fish, grilled white meats and poultry and dry cheeses (Queijo Sao Jorge, Edam, Mimolette).
