Food pairing
A white wine that goes well with fine dishes based on fresh vegetables or gratins, starters such as oysters or asparagus in butter sauce or even oily fish dishes such as salmon.
Grapes: Antao Vaz & Arinto
After a careful selection of the grapes, they were pressed. Fermentation in stainless steel tanks at a controlled temperature of 16ºC. followed by five months of aging on fine lees, with the aim of improving the structure and texture of the wine.
Herdade dos Arrochais is a family estate located in Amareleja, in the middle of Alentejo.
After the acquisition in 1990, the family patriarch's passion and dedication to the land and hunting led him to invest all his personal and patrimonial resources in restoring the estate's soil, flora and fauna, as well as the exemplary recovery of agricultural land with a view to restoring its productive capacity and quality. The family is very close to nature. So the soil has been 'revived', the land has been reforested and wildlife has been cared for, some of which is reflected in the labels. Wine is grown here up to 1,500 meters above sea level.

It should be drunk very cold at a temperature of 6 to 8º C. Can be drunk now but can continue to evolve in the bottle for 5 years.
