Static decantation for 48 hours at 8ºC, fermentation at 15ºC for 3 weeks with mixed varieties. This special wine, produced with Chardonnay and Fernão Pires grapes, has matured for 12 months in French oak barrels.
The origins of Quinta de S. João Batista are lost among stories of noble successions, donations to religious orders, and many other events.The Quinta is part of the Paul do Boquilobo Biosphere Reserve, recognized by Unesco in 1981, where it is possible to observe all types of migratory birds, including the famous storks and herons and other fauna diversity such as hares, butterflies, and eagles, lending a special beauty to the landscape.It has a total area of about 145 hectares, of which 130 ha are vines, 15% of which are white and 85% red, with particular emphasis on Touriga Nacional, Castelão, and Syrah.Inserted in the demarcated region of the Tagus and located in the Bairro area, its clay-limestone soils are the ideal “terroir” for the production of full-bodied, complex, and intensely colored red wines and fresh, aromatic, and persistent white wines.The entire property has drip irrigation, with the vines wired to allow mechanical harvesting
