Amber bright colour. Notes of exotic polished wood and lightly smoked. Aroma of dried nuts and figs. Meaty and extremely smooth. Impressive freshness after taste due to the magnificent crispy acidity.

slightly cooled as an aperitif with olives and almonds or with sushi, oysters, squid carpaccio with tomato-coriander vinaigrette, salmon tartare, proscuitto with ham, crab & fresh tuna (sashimi).
Grapes: Sercial
Sercial is traditionally the white variety used for the driest Madeira style. A serial is therefore always dry! This means that alcohol is only added at the very end of the fermentation, when almost all sugars have been fermented. The late maturing breed is also called "Esgana Cão" (dog strangler) because of its extremely high acidity in its youth. Due to that almost undrinkable acidity, sercial usually matures for quite a long time. Sercial comes from the highest vineyards in the south, at about 600-800m or in the cooler North.
Grapes from various quality vineyards of Jardim da Serra. Grapes were pressed in a continuous press. Arresting of fermentation takes place at the desired degree of sweetness by adding vinic alcohol (96%).
We continue to preserve the traditional methods of making and aging Madeira wine. This wine is my first Sercial in Frasqueira category and was produced from grapes grown in Jardim da Serra, on the South Coast of Madeira Island. In 1992, Sercial grape had a short production as it was a rainy year. However, despite all the rain, this wine aged beautifully throughout the last 20 years. This is the reason why we have decided to bottle this Frasqueira which is also a single cask. This Sercial 1992 was aged in an 850 liter old French oak cask with number 72. In March 2013, 1.000 bottles have been filled, all individually numbered.

Madeira is a wine that has matured in an oxidative environment for several years, before being bottled in a reductive environment. It is therefore useful to open the bottles a few hours in advance. The bottles can then be stored almost indefinitely, as the air no longer affects Madeira wines. In fact, the wine tastes better after months - if there is still left - than when opening the bottle.
