This is the second vintage of a sparkling wine with the Tiago Cabaço signature. Attractive, fresh and light that reveals the fruit in all its freshness. Visually it presents a bright golden straw color with a fine and persistent bubble. On the nose it is expressive, revealing good complexity, notes of nuts, almonds and some white fruit. In the mouth it shows liveliness with finesse and delicacy. Good structure and acidity that give it a fresh and long finish.
Tiago Cabaço is no longer an emerging value in the Alentejo, but today asserts itself as one of the most solid and striking names of the new generation of Alentejo producers. Born and raised in Estremoz, in the heart of the Alentejo wine region, he became accustomed to living and working in the fields, in his parents' vineyard from an early age, and learned from them the small and great secrets of the vineyard Today, Tiago Cabaço is considered one of the most promising producers in the Alentejo, with a family of seductive and serious wines, modern in style and shape, but deeply Alentejo in character.
Food pairing
Excellent as an aperitif, also delicious with foie gras, rabbit with prunes, desserts, salads, white meat dishes, pasta, hors d'oeuvres and fish.

The summer was hot but Estremoz maintained the great thermal amplitudes that are so characteristic and fundamental. It allows the vineyard to obtain slow maturations in order to get grapes with an exemplary balance between alcohol and acidity. The proximity of the cellar to the vineyards, the soft presses, the low fermentation temperatures, as well as the second bottle fermentation, followed by 9 months of work on the lees until the degassing, were also factors that contributed to the result of this second edition Tiago Cabaço Reserve Sparkling Wine brut, produced by the classic method.
