Excellent dessert wine with chocolate, petit fours, coffee and cheese. Delicious when served in a wide glass with ice and lemon zest. also chef's favorite in the kitchen for enhancing rich sauces.

Grapes: Tinta Negra Mole

The Tinta Negra Mole grape is the most planted grape on the Portuguese island of Madeira and therefore responsible for eighty percent of the Madeira production. Although it is made into beautiful wines, it does not belong to the highest rated grapes on the island.

The Spaniards call him Negramoll. He is originally from Andalusia, where his name is Molar. But the grape is mainly known from the Spanish island of Tenerife and even more famous as Madeira grape. The Tinta Negra Mole normally gives fairly light and soft red wines. They have an exuberant scent and are best drunk young. In the Madeira it is totally different. Then it is sweet with thick brown juice, and can be stored indefinitely.

Michael Blandy & Chris Blandy. The Blandy's house dates from 1811 and is still owned by the original family to this day. In 1925, Blandy's joined the Madeira Wine Association, with the aim of profiling itself more efficiently on the world market.

Serve at 10-12 °C . Don't need to be decanted.

Madeira is a wine that has matured for several years in an oxidative environment, and is then bottled in a reductive environment. It is therefore useful to open the bottles a few hours in advance. The bottles can then be preserved almost indefinitely, since the air no longer has any influence on Madeira wines. In fact, the wine tastes better after months - if there is any remaining - than when you open the bottle.
