Quinta dos Carvalhais Colheita is a red wine produced in the Dao's region. It shows tight's tannins interwoven in black fruit aromas, as ripe raspberries and gooseberries. It's an extraordinary red wine with lots of complexity with an elegant bodied, a lively acidity and a very balanced finish.
Food-Pairing
This incredibly gastronomic wine is perfect for meal-times and pairs wonderfully with slightly fatty dishes, such as octopus "à lagareiro" or oven-roasted meats. It is also an ideal accompaniment to slightly cured Serra de Estrela cheese.
Grapes: 0% Touriga Nacional, 30% Alfrocheiro, 15% Tinta Roriz, 5% Jaen
The grapes were harvested by grape variety and plot, where they were subject to rigorous quality controls. After destemming and soft-crushing, the grapes were directed via gravity to small stainless steel tanks with temperature controls, where they were vinified by variety. Alcoholic fermentation took place for a period of
roughly 8 days at an average temperature of 27ºC. 60% of the wine aged for 8 months in 225 litre barrels of used French oak, with the remainder resting in
stainless steel tanks. After ageing, the wine was subject to light fining and filtration prior to bottling. It was subsequently bottled without cold stabilisation treatment and, thus, a natural deposit may form in the bottle over time.
Store & Serve
Keep in a cool, dry place. Serve at between 16ºC-18ºC. This wine should be decanted after 4-5 years of age. This wine has great ageing potential and will evolve positively for the next 10 years, if stored in good conditions. Once opened, consume the same day; however, this wine should retain its quality for 24 hours if stoppered with a vacuum seal.
