Duas Quintas stands for the two vineyards where this wine comes from, namely Quinta de Ervamoira and Quinta dos Bons Ares.
The grapes, which are harvested by hand in 150 kg boxes, are crushed and destemmed, then fermented in stainless steel vats of which the temperature does not exceed 25 degrees. Maceration is just long enough to give the wine the desired body and structure. After malolactic fermentation in barrels, 20% of the wine rests for 12 months in French oak barrels, while the rest is kept in stainless steel barrels. The wine is bottled 18 months later.
