Grapes: 100% Alicante Bouschet
Mechanical harvest at night. Grapes are completely destemmed. Cold pre-fermentation maceration for 48 hours. Controlled temperature fermentation (22-28ºC) in stainless steel tanks. Maceration after fermentation for 5 to 10 days. Malolactic fermentation in stainless steel tanks. Aged for 12 months in French oak barrels
The Spring of 2021 was rainy with some average mildew pressure and the vines reacted well in terms of respect for water needs during the beginning of
the vegetative season. The temperatures over the course of the summer were quite mild, with only a few days above 100ºF. Maturation was quite slow, promising a great 2021 harvest
