Vitor is one of Portugal’s great young Chefs, and he’s been making his way as a Restauranteur both in Portugal and abroad. After getting the wine bug from Dirk Niepoort, he decided to take matter in his own hands (literally) and craft one of Portugal’s craking new explorations of the Alentejo’s Serra de S.Mamede, and in Castelo Rodrigo with his newest Colmeal Wines.

Grapes: Grand Noir, Trincadeira, Tinta Roriz, Castelão & Arinto
The grapes come from an 85-year-old vineyard, known as Salão Frio.
Half of the grapes are crushed, the other half not. The vinification is done in stainless steel, maintaining the stems and without active extraction. The maceration time depends on the year and is between 60 and 90 days. Matures in old oak barrels, then bottled for at least 2 years.
