Domino Colar Tinto. Only 3.200 bottles were produced from the 2018 year. The wine stands out for its elegance, low alcohol and grand character. Delicious "crisp" red wine, juicy, and light because of its acidity structure, with a salty, iodised touch.
Vitor is one of Portugal’s great young Chefs, and he’s been making his way as a Restauranteur both in Portugal and abroad. After getting the wine bug from Dirk Niepoort, he decided to take matter in his own hands (literally) and craft one of Portugal’s craking new explorations of the Alentejo’s Serra de S.Mamede, and in Castelo Rodrigo with his newest Colmeal Wines.

Grapes: Castelão
Castelão from the Atlantic Coast, west of Lisbon. Vine age averages 25 years old, grown on clay-limestone soils. Fermented 50% whole-cluster and macerated in stainless for five days. The vines are on average 25 years old and are located in prehistoric sand dunes on cliffs above the Atlantic Ocean, north of Lisbon. They are deeply rooted in a layer of clay 2 to 4 metres deep. The wines of Colares benefit from unique and sustainable artisanal cultivation practices. The appellation has now been reduced to a few hectares due to progressive urbanisation, as well as the difficulty of producing wines on this exceptional terroir, if only because of the winds.
