Pasmados white is one of the top white wines from José Maria da Fonseca being released only after a minimum period of two years after the harvest. Straw yellow with greenish reflections. Very marked by the Viognier grape variety, white peach, apricot, some spices and wood with a subtle touch of vanilla. Creamy, very balanced with elegant notes of walnuts and almonds and a present but integrated acidity
Domingos Soares Franco: «In the 1980s’ at José Maria da Fonseca I discovered in one cellar about 200 bottles of Pasmados White 1963 and 1964 vintages’. After tasting both vintages, I realized the excellent quality and good evolution of this wine in bottle. Color with natural evolution, aroma reminding toasted bread and mature walnuts, hazelnuts and pistachio but without oxidation. With this discovery I had the idea to produce a white wine with a similar evolution. Over the years and after several harvests I chose the following varieties, Viognier (clay and lime), Viosinho and Arinto (sandy).»

The grapes come from Pasmados, a vineyard of about 18 hectares, in the Serra da Arrábida, 5 km west of Azeitão. It takes its name from the famous Pasmados fountain in Azeitão from the XVIII century. Fermentation of 50% in oak barrels and 50% in stainless steel. Ripes 3 months in same barrels, 2nd year French oak with bâttonage.
