Vitor is one of Portugal’s great young Chefs, and he’s been making his way as a Restauranteur both in Portugal and abroad. After getting the wine bug from Dirk Niepoort, he decided to take matter in his own hands (literally) and craft one of Portugal’s craking new explorations of the Alentejo’s Serra de S.Mamede, and in Castelo Rodrigo with his newest Colmeal Wines.

Grapes come from an 85-year-old vineyard, known as Salão Frio.
in small lagares while keeping the stems. 30 to 40% of the blend used for this red wine actually comes from the white Arinto grape. The must is processed for 7 days, then pressed and fermented. Matures for a few months on lees
