Maceration for 5 days and fermentation in stainless steel vats without the addition of enzymes, yeast cells or other oenological products. Aged for 12 months in French oak barrels and then in the bottle for a long time. Unfined and Unfiltered without added sulphites.
Encosta da Quinta is a family business, home to Rodrigo Filipe and his Humus wines. Rodrigo is one of the pioneers and most experimental and exciting producers of natural wines in Portugal. A self-taught winegrower and former civil engineer, he left this career to devote himself to the vineyards acquired by his grandfather in 1960. The winery is located in the demarcated region of Óbidos, between the Atlantic Ocean and Serra dos Candeeiros, north of Lisbon. This place focuses on natural winemaking using local grape varieties. The vines are planted on clayey soils and the growing season is influenced by the Atlantic wind. Organic farming practices do not use chemicals that could affect the natural balance of the terroir. When the grapes are ready, they are carefully harvested by hand.
