The production obtained in the vineyards is vinified in Monte dos Pinheiros, an estate with one of the most modern wine cellars in Portugal and a production capacity of more than six million bottles per harvest. The institute's most special wines are matured in a historic and sacred place, Adega da Cartuxa, located at Quinta de Valbom, on the outskirts of Évora. Completely surrounded by vineyards and with charming wine tourism, Adega da Cartuxa is a must-visit for anyone going to Évora.

The winery has 600 hectares of its own vineyards, where the vineyards are in a permanent process of renovation and conversion. For white wines, the main grape varieties are Roupeiro, Antão Vaz and Arinto. As for red wines, the most commonly used grapes are Trincadeira, Aragonez and Castelão. Quinta de Valbom is also home to the historic Monastery of Santa Maria Scala Coeli, better known as the Cartuxa Monastery. Built between 1587 and 1598, it is used by Carthusian monks in their lives dedicated to prayer. Having undergone a series of renovations, the monastery remains a place of contemplation.
