Cova da Ursa has been given a new look. This harvest has a pale yellow color, with greenish reflections, a rich aroma of yellow fruits characteristic of the Chardonnay variety, such as peach and pineapple, combined with toasted and vanilla “nuances”, coming from contact with French wood. In the mouth, we find strong flavors of yellow fruits well combined with wood, a clear acidity, which gives it a mineral character and a full and persistent finish. With the aging in bottle, it gains complexity, emphasizing dried fruit notes.

Delicious with strongly seasoned dishes of fish, poultry or game birds. Also delicious with Azeitão cheese and other soft cow or goat cheeses

The Chardonnay grape is similar in variety to the Antão Vaz grape.
Produced with grapes of the Chardonnay variety, from our “Cova da Ursa” vineyard located in the hills of Azeitão, in the Serra da Arrábida. Its stony soil, clay-calcareous, and the meso-climate of the Arrábida area, lead the grapes of this variety to ripen slowly, reaching a high quality. The harvest of this grape variety took place in September. From its careful winemaking technology we highlight the full fermentation and maturation of 71% of the wine during 4 months in new French oak barrels, fine grain. Also the traditional way is made daily “batonnage” for a greater complexity of aromas and flavors.
