A delectable wine combines well with grilled fish, fresh seafood and chicken salad.

The grapes come from two vineyards, Vinha da Nora (60%) is 35-37 years old, in organic production since 2015, the varieties are Roupeiro (50%), Rabo de Ovelha (20%), Arinto (10%), Tamarez (10%) and Alicante Branco (10%). From Vinha de Vale do Cepo (40%), aged 47 and certified as integrated production, the varieties are Roupeiro (synonymous for Síria; 20% of the total) Alicante Branco (synonymous with Boal de Alicante; 10% of the total) and Tamarês (synonym for Trincadeira das Pratas; 10% of the total).
The grapes are picked between 3 and 4 am, pressing the whole bunch with a 1st pressing, fermented vertically, and the 2nd pressing in horizontal tanks. Cold decant without additives to settle. Infusion with yeast strains collected in the wild, such as QA23 (selected from the north of Portugal). Clearing with bentonite clay. Low intervention throughout the cycle. No malolactic fermentation.
