Manual harvest and carefully selected grapes. Short pre-fermentation maceration followed by alcoholic fermentation with temperature control of 12 - 14 ºC in stainless steel vats, producing wines with more elegant and conserved aromas. Stage sur lies (fine wine lees) with bâttonage in French oak wood
