The grapes come from premium vineyards in the Cima Corgo and Baixo Corgo sub-regions of the Douro. The Douro is the largest mountainous vineyard region in the world and the vines are planted on steep terraces sloping down to the Douro River, many of which are supported by ancient UNESCO-listed dry stone walls. Due to the steep slopes and inaccessibility to machines, the vineyard work and harvesting are done by hand. Soils in the Douro are composed of a dense, slate-like, metamorphic rock called shale. In the Douro, the slate breaks vertically, allowing the vine's roots to dig deep to access water and nutrients to help them through the hot Douro summers. Due to the poor quality of the soil, the vines deliver low yields - an average of 1.5 kg of grapes per vine - of intensely concentrated fruit, bursting with flavor. The grapes intended for the 10-year-old white port 'Dona Antónia' are harvested late, which makes the intense flavors even more concentrated.
Upon arrival at the Quinta do Sairrão winery, the late harvested grapes were destemmed and gently crushed. The skins remained in contact with the must during fermentation, with multiple pumping overs. This resulted in an intensely aromatic port with a rich texture on the palate. The fermentation was closely monitored to determine the ideal moment to stop the fermentation by fortifying with grape spirit, leaving some of the grapes' natural sugars behind. The wines remained in the Douro until the spring after harvest, after which they were transported downstream to the historic Ferreira cellars in Vila Nova de Gaia for oxidative aging in oak barrels. We choose wines aged between 4 and 9 years so as to maintain the same style, with an average age of 7 years.
