Harvest happens in the morning, in order to maintain their freshness as much as possible. In the cellar, after the grapes have been destemmed and crushed, the must is drained and pressed, safeguarding the must's qualitative and varietal characteristics. Vinification at a constant temperature of 18ºC during 14 days
