The name "Tola" goes back to the former owner of the vineyard in the early 19th century. A somewhat crazy woman with an extremely eccentric character, according to the stories (Tola = foolish, foolish). A precise white wine that has the typical limestone character of Bairrada. erzik blossoms, pear, honey and toasted almonds. Long lasting, with light smoky notes, elegant acidity and a silky texture.
Food-Pairing
Goes well with seafood, fish, salads, white meat dishes. Delicious with scallops with roasted almonds and parsnip purée.
Grapes: 100% Bical
The grapes are hand-picked in small baskets, gently pressed and spontaneously fermented in traditional pipas (500l barrels) in which the wine is aged for about 12 months without batonnage. After a further 4 months of blending in stainless steel tanks. Bottled without fining and filtering.
The DOC Bairrada is located in the north of Portugal, between the coastal town of Aveiro and Coimbra on the Rio Mondego. The area is a sub-region of Beira, quite low-lying and strongly influenced by the Atlantic Ocean. The Bical grapes were grown here about 60 years ago on rolling hills in the lowlands on calcareous loam/clay soil (barro = loam/clay).
The plant density seems a bit wild, but this is the only way to bring out all the nuances of the terroir. Yields are low and the vineyard is surrounded by a fence to allow sheep to graze in winter, fertilizing the soil and creating the biodiversity of native plants. This vineyard is the source of dandelion, the flowers of which are biodynamically processed into a compost preparation (506). The "Tola" vineyard was one of the first to be converted to biodynamic farming. (From 2020, the wines from here are even Demeter certified).

Store in a cool place (12°C). Can certainly be stored in the cellar for another 15 years, but is already drinking well. Don't forget to decant.
