2 women, 2 characters, and you can taste it! Four own wines from the restaurant "Dumon" in Wakkerzeel, and this is one of them. Lemon yellow in color and some greenish reflections. In the nose, this wine reveals a beautiful complexity and an exuberant aroma of
white stone fruit, supported by distinct minerals and subtle notes of vanilla. The taste is fruity, with a noticeable volume in the mouth, elegant and ending with a crisp freshness in the long finish.
Food-Pairing Delicious wine with spicy delicacies, based on oven-baked fish, grilled white meat, stews and soft cheeses.
Grapes: 50% Arinto, 50% Rabigato
Manual selection of grapes at the entrance to the cellar. Maceration of the cold peel for 8 hours. Gentle pneumatic pressure, followed by fermentation in lightly roasted French oak barrels, at a controlled temperature of 15°C. Aged for 9 months in the same barrels (35% new oak) with battonage every 15 days.
