This smooth and elegant red wine has been aged for 6 months in new French and American oak barrels
That sounds like a solid wine, but the Ripanço is very soft and supple, with very soft tannins, a little spiciness and fine fresh acidity. Its suppleness and softness comes from the ripanço technique Ripanço, a technique dating back to Roman times and traditionally used in the south, where the grapes are manually destemmed. Just a wonderfully tasty wine.

The wine has a deep ruby red color. Features an aroma of black currants, coffee, blueberries, raspberries & vanilla. Smooth, balanced on the palate, with good acidity and ripe tannins. The finish is medium long.

Herdade do Monte da Ribeira, where the vineyard is located, is located on the road to Monsaraz and has an area of ​​120 hectares, of which 72 are vineyards. The wine cellar, located in the center of Reguengos de Monsaraz, combines tradition and history with the latest technology. It is this combination, a structural constant throughout the secular history of José Maria da Fonseca, that makes José de Sousa a sublime creation, mixed with handicrafts and modernity. The traditional wine cellar (curiously installed below ground level in order to preserve a cool and constant temperature throughout the year), has two mills for walking and 114 amphorae of clay for fermentation and a rippling table. The modern wine cellar has 44 stainless steel tanks and all the technology necessary for the winemaking of red wines.

Rippling, a technique used in this wine, dates back to Roman times, traditionally used in the south of Portugal for the destemming of grapes manually. Thus, the rippling technique consists of destemming the grapes by hand with the aid of a table specifically designed for the purpose (rippling table) consisting of several wooden slats. In this way, the hard tannins of the stem are not extracted, resulting in a softer and softer wine, with greater elegance.
