Grapes: Encruzado, Malvasia Fina, Cerceal, Bical, Verdelho & Arinto
Manual harvest. Manual selection of grapes on the sorting table. Total unloading followed by gentle crushing. Hurry. Cold static decantation for 24 hours. Co-fermentation of the entire batch with natural yeasts in cement tanks with temperature control between 15ºC and 20ºC. Aging on fine lees with periodic stirring until mid-April.
