Herdade do Peso Trinca Bolotas Tinto 2022
Intense ruby color. This wine has an aroma of vibrant red fruit with floral notes, courtesy of the Touriga Nacional grape variety. On the palate, it is incredibly balanced with very smooth tannins and a refreshing acidity. An extremely gastronomic wine with a long finish.
The Alentejo pig, an autochthonous Portuguese species, is the only survivor of grazing pigs in Europe, roaming freely in the cork oak forests, where it feeds preferably on acorns. Because of the way it marks the landscape and preserves the region's Mediterranean forest, it is Alentejo's heritage. It is also a gastronomic treasure, and an invitation to pleasure. By associating it with this wine, we combine two major symbols of the Alentejo at the table.
Foodpairing
Due to its soft tannins and good balance, this wine goes well with light dishes such as poultry and pasta, sausages, hams and meat dishes of the most extensive cuisine.
Grapes: 44% Touriga Nacional, 40% Alicante Bouschet, 16% Aragonez
Vinified from selected plots of Alicante Bouschet, Touriga Nacional and Aragonez. The grapes were harvested at their optimal point of phenolic/aromatic ripeness. After de-stemming and crushing, pre-fermentation maceration took place for 3 to 4 days, increasing the aromatic and polyphenolic complexity. Fermentation at 26ºC followed with gentle pumping over, preserving the fruit and extracting important tannins for the final balance. After the malolactic fermentation, the wines aged for 6 months, 70% in stainless steel vats and the remaining 30% in used French oak barrels. It was subjected to light gluing and filtration, before bottling.
