Food pairing

Grapes: 100% Tinta Francisca
A grape variety for port wine. Often confused with Touriga Franca, wich is also called Touriga Francesa, to make it even more confusing. Some sources suggest that Tinta Francisca might be a distant relative of the great Pinot Noir, and thus a member of the wider Pinot family (which includes Chardonnay, Aligote, Gouais Blanc and Pinots Meunier, Gris and Blanc). While there is an undeniable similarity between the circular leaf shape of these two varieties, and their conical grape bunches, the theory is unproven.
Vinified in the Quinta do Seixo winery, from grapes sourced from a vineyard in this region. The harvest is manual and the grapes are selected in the vineyard and at the reception in the cellar. After smooth crushing and total destemplation, the grapes are pumped to the stainless steel vats, where alcoholic fermentation begins. A long and smooth maceration is carried out at a controlled temperature.
Aged in used French oak barrels for a period of approximately 24 months. During the ripening period, it is subjected to numerous tests and analyzes. Filtration only happens before bottling.
