The vinegar of CARM is created from pure red wine and aged for 15 years in American oak barrels. It has very intense flavours with bright, fresh acidity at the end on the palate. Subject to a careful production method in which, when the fermentation is finished, the vinegar is placed in oak barrels in order to benefit from the aromas of the wood and the wines that have previously been there.
