The winemaking tradition in the Évora region goes back to time immemorial. The charter that D. Manuel I granted to the city in 1501 bears witness to this. Adega Cartuxa combines the taste of history with the unique art of this wine, in an evocative edition of the Foral. This white wine is made from the Assario grape variety and has youthful notes characterized by fruity aromas and fresh flavors, a spicy edge, with bitter almond notes on the palate. It was first produced in 2000.

Grapes: Assario (Palomino in Spain, Listán in France)
This grape variety is found in the Douro region as well as the Dao, Beira Interior and Lisboa regions. Wines made from Assario are subtle, not so intense, quite fresh and moderately complex. There is also a hint of molasses, beeswax and nutmeg. The wine appears moderately smoky even though it is not aged in wood with some delicate flavors and aromas and moderate acidity.
