Grapes selection at the entrance of the cellar. Total stripping with
cold premaceration and fermentation (8ºC) in stainless-steel tanks for 6 days (22-24 °C). Two “delastages” a day to extract soft and structuring tannins. Aged 6 months in oak barrels
