Chocolate dessert
Wijn en chocolade hebben veel overeenkomsten. Ten eerste worden ze allebei beschouwd als afrodisiaca en beiden bevatten flavanolen (antioxidanten). Maar ondanks deze opvallende overeenkomsten, blijft het toch een hele uitdaging om wijn en chocolade te verenigen tot een geslaagd culinair hoogstandje.
Bijvoorbeeld, als u een heerlijk glas droge rode wijn combineert met een stukje donkere chocolade, zal de wijn bitter en zuur smaken. Deze smaak onbalans is afkomstig van de verhoogde niveaus van flavanolen (verschillende soorten tannine) gevonden in zowel chocolade en wijn die met elkaar botsen en je smaakpapillen teisteren.
Gelukkig zijn er wel een aantal wijnen die het uitstekend doen bij chocolade en een geweldige sensatie veroorzaken!
Een paar zinnenprikkelende pairings die je allemaal kan uitproberen zijn:
- Witte chocolade met Rosé Port, Moscatel de Setubal of een heerlijke Vintage Port
- Melk chocolade met Moscatel de Setubal of een Ruby Port
- Karamel chocolade met Madeira, 20 Year Tawny Port of Moscatel de Setubal
- Zwarte chocolade doet het heerlijk met Tawny Port en 10 jaar oude Tawny Port
