Dessertwijn, het 'pareltje' van de wijnkelder
Dessertwijn is voor de liefhebber het 'pareltje' van de wijnkelder. Eeuwenlang waren dessertwijnen de meest gewilde wijnen ter wereld, maar in de loop van de vorige eeuw zijn we steeds 'droger' gaan drinken.
De naam doet vermoeden dat je ze alleen na de maaltijd bij een zoet dessert drinkt. Niets is minder waar. Een goede zoete wijn kan je uitstekend als aperitief drinken. Klassiek is de combinatie van een flink zoete witte wijn met een voorgerecht van ganzenlever. Ook blauwschimmelkazen combineren uitstekend met zoete dessertwijnen. Half-zoete witte wijnen gaan weer prima met salades met blauwe kaas, noten en een zoetzure dressing.
Natuurlijk kun je een zoete wijn met een zoet dessert combineren. Let er daarbij wel op dat de balans tussen het dessert en de wijn klopt. Dat betekent dat beide ongeveer even zoet moeten zijn.
Na de maaltijd is een zoete dessertwijn ook een uitstekende begeleider van de kaasplank. Vooral porto en zoete Madeira nemen deze taak graag op zich.
